** - raw wood shelving x2 observed - unfinished wood is not permitted. All surfaces in a food processing area/food storage must be smooth, cleanable, non-absorbent and durable., ** - do not use dirty newspaper or single use cardboard to line surfaces - not food grade and cannot be cleaned.
** - broken food containers observed - please discard, ** - descale or delime your dishwasher - the scale buildup inside was very thick.
