The high-temperature dishwasher in the deli department had a notice posted stating, ‘Do not use for sanitizing – use third sink.’ The temperature at dish level was measured at 69°C using a probe thermometer (minimum required: 71°C). The manager advised that a work order has been submitted to repair the faulty heating element to ensure the unit reaches 71°C at dish level. The facility is equipped with a three-compartment dishwashing sink and does not use reusable customer dishes.
