Chlorine solution in spray bottle was at 50ppm. The label for the spray bottle was incorrect. Properly label the bottles of chemicals.
Pizza prep cooler was at 6C. The temperature of the Donair sauce was at 5.9C. Operator was informed to monitor temperature and to take corrective actions should the unit not return to 4C soon., , Probe thermometer was present.
Expired QUAT test strips (November 15, 2025) were presented during the inspection. The roll was still in its original packaging, wrapped in tin foil. QUAT was not used as a sanitizer during the inspection. Obtain proper test strips for the chemical used and develop a habit of using the test strips on a regular basis to verify concentrations.
