PHI educated staff regarding time requirements at the time of inspection and requested products be refrigerated., , Please discontinue holding high-risk foods at room temperature greater than 2 hours and use time labels to monitor the duration that high-risk foods are held at room temperature. , , Alternatively, the facility can apply for time as a public health control for specific menu items to extend the holding time.
