The operator informed that they do an air dry step after the 2 compartment wash and rinse. A sanitize step must be performed either through a mechanical dishwasher or a modified 3rd sink sanitize step.

The high-temperature dishwasher was not operational during the inspection. Until the dishwasher is repaired, children's utensils and dishes should be switched to disposable. Larger pieces of cooking equipment such as pots or mixing bowls can be washed in the sinks.
There were not any paper towels available for hand drying. Upon request, new paper towels were added to the kitchen. Please ensure there are always paper towels available for proper hand drying.
