No thermometers were available in the undercounter, food preparation, and sweet display coolers for temperature monitoring. Thermometers must be provided in each cooler to verify that foods are stored at 4 °C or below.
Food items stored in the undercounter cooler measured between 17–18 °C. All high-risk foods, including cut vegetables, were relocated to the walk-in cooler to maintain a temperature of 4 °C or below.
No test strips were available to verify chlorine sanitizer concentration. Test strips must be obtained and used to monitor sanitizer strength.
