Tapioca pearls on a back counter were measured at 13C. Do not leave foods out at room temperature for more than 2 hours. Keep high-risk foods below 4C or above 60C. Discard any high-risk foods left between 4C and 60C for more than 2 hours. The pearls were then placed in the cooler.
