Cold holding units were at 4C, however, both units were missing thermometers. Please have thermometers installed in each unit., , A chest freezer was located in the mechanical room and was less than 0C. Good., , Please also obtain a thermometer to measure internal temperatures of food.
Mechanical dishwasher was not on at the time of inspection. Operators indicated dishes were mainly manually washed. The unit was not tested at the time., , A two compartment sink and a larger basin (w/ spray wand) were present. Discussed three step dishwashing method with operators. , , Dish detergent was present, however, a chemical sanitizer was missing.
