Mechanical dishwasher was not on at the time of inspection. Operators indicated dishes were mainly manually washed. The unit was not tested at the time., , A two compartment sink and a larger basin (w/ spray wand) were present. Discussed three step dishwashing method with operators. , , Dish detergent was present, however, a chemical sanitizer was missing.
