Two ham and cheese croissants were found to be at room temperature. These croissants were being kept on display for several hours with no temperature control. These croissants were ordered to be discarded., , REQUIREMENT: Foods with perishable fillings, especially meat-based fillings, must be kept under proper temperature control. Keep these croissants inside the display cooler.
There was no chlorine sanitizer connected to the chemical dishwasher at the time. Sanitizer was promptly provided and primed through the dishwasher. Dishwasher was tested and confirmed to be at 100 ppm.
