The internal temperature of the alfredo sauce was tested using a probe thermometer and measured at 10C., , The cooler was observed to be overfilled and low-risk food items like buns were removed to make room in the cooler for cool air to circulate., , 2) The internal temperature of the alfredo sauce in hot holding units were tested using a probe thermometer and measured at 49C., , The trays were immediately transferred to the chaffers where three Sternos were recommended to be used instead of two. The other trays of alfredo sauce were sent back to the main kitchen to reheat. The inspectors were informed that the Alfredo sauce will be brought back later in the afternoon.
