- The three-sink dishwashing method is in use for the dishes. However, the sink size is insufficient for some of the larger metal trays. Staff explained that they turn the trays upside down to sanitize them properly., *Dishwashing in the facility must be capable of accommodating the largest utensils in use., **Installing a commercial dishwasher is strongly recommended to meet the needs of the facility. Alternatively, the sink could be replaced, or dishes that cannot fit into the sink should be removed from the kitchen. A follow up will be done to ensure compliance.
