** - food was stored on the dirty floor - please ensure all foods and food equipment is stored off of the floors.
** - improper use of an ice bath observed: high-risk foods such as cut vegetables were stored at room temperature on a wire mesh and not in contact with the ice below. The food item must be all the way into the ice, surrounded by the ice to ensure proper temperatures of less than 4'C is maintained.
** - Food Handling Permit is invalid. The sign outside says Shuaba but the Permit states the name is Taste of Szechuan. Please apply for a trade name change to correct the FHP. ** - raw wood shelving x2 observed - unfinished wood is not permitted. All surfaces in a food processing area/food storage must be smooth, cleanable, non-absorbent and durable., ** - do not use dirty newspaper or single use cardboard to line surfaces - not food grade and cannot be cleaned.
