Any items that do not serve a purpose to the facility is to be removed., , Stacks of egg cartons were observed in the facility. Operator was using them to absorb oil. Ensure food contact items do not touch the egg cartons. It is best to remove them, , Paper towels were used to line the floor by the cookline. Ensure the towels are frequently changed throughout the day.
