**-The commercial flour/dough mixer was covered with black plastic garbage bag. Remove the garbage bag, clean and sanitize equipment and use only food-grade covers.
**-Boxes of raw chicken were stored directly on the floor in the meat cutting area and walk-in coolers. Relocate all food off the ground to shelfing units to prevent cross contamination and allow for proper cleaning.
**-Raw breaded chicken wings were stored uncovered in a plastic container in the kitchen chest freezer. Food must be covered and stored properly in coolers. Corrected during the inspection.
**-Food packages with best-before dates of 2024 were still on display for sale. Products were removed during inspection.
**-Holes were observed in walls around plumbing fixtures and a hole in the floor at the first shelving unit. Repair and seal all opening.
**-A couple of ceiling tiles near the entrance were hanging and not properly secured. Repair and secure loose tiles.
**-The following food equipment were found in the meat cutting area in poor sanitary conditions and require thorough cleaning: The large metal sieve/strainer stored under the prep table, the Viel belt sander/grinder on the table, the lower shelves of the prep tables, all walk-in cooler doors, handles, and shelving/racks. All equipment must be visibly cleaned and maintained in a sanitary condition
**-Manufacturer labels were still present on plastic food storage containers. Remove labels to allow for proper cleaning and prevent residue buildup.
**-The kitchen cookline exhaust canopy had a buildup of grease and grime. Please maintain exhaust canopy in clean and sanitary condition.
**-The following areas were found in poor sanitary condition with food debris, visible dirt, grime, and/or both fresh and old animal blood spills and requires thorough cleaning: the floors of all walk-in coolers and the areas under the meat slicer and flour mixer. These areas must be thoroughly cleaned and kept always in sanitary condition
**-The plastic table cover in the meat cutting area was torn/ripped with holes and dirt buildup creating an unsanitary food-contact surface. Replace with a smooth, non-adsorbent, easily cleanable cover.

* - no completed WRITTEN cleaning schedule was available upon request – please edit the cleaning schedule to include all food equipment represented in the facility and the frequency of the required cleaning.
