No - as observed in the upright sliding door refrigeration unit in main kitchen, food products are not to be stored in opened tin cans overnight due to corrosion possibility and the tin can being an unsanitary food container (i.e. cannot be adequately washed and sanitized). The operator is to ensure food-grade containers are used for all food products and storage.
No - some better overall organization is necessary in the front service area and in the main kitchen area, to allow for adequate cleaning and ease of pest control inspection.
No - there were no chlorine test strips available. The operator was advised to order more supplies of chlorine test strips, and to use daily to 'check' the sanitizing concentration of the commercial dishwasher at final rinse cycle (to be at minimum of 100ppm concentration of chlorine sanitizer).

Three glue boards were checked (grill, dishwasher & near walk in cooler). Between 3 to 15 cockroaches were found on each board. At board had at least 1 live cockroaches., , Operator said they had a contract with Rentokill but could not produce previous reports. Operator will email that information., , Steps:, 1) follow directions of pest control company, 2) improve sanitation underneath equipment in kitchen and in the dry storage area, 3)at the end of the day ensure all food is put away and/or protected, 4) beginning of the day ensure all food preparation surfaces are disinfected, , Feb 21, 2025, Previous traps checked did not have any new activity. Hired pest control company will be doing an application beginning of next week. Operator needs to follow steps pest control company requires to ensure treatment will be successful.

Received a large order and there were a number of items being kept at room temperature in the kitchen and dry storage area. The exterior temperature of items was between 35 to 43C. The recipient of the order arrived about 20 minutes later., There is no ability in the establishment to keep that volume of food at 60C(140F). You need to stop taking large volume orders or add commercial hot holding units to maintain the food at 60C(140F) until the recipient arrives to pick up their order.
