Cooling of tomato sauce is taking about 5-6 hours in a very large pot., , Ensure the tomato sauce happens quickly - from hot to room temperature within 2 hours and then to 4C or less within 4 hours. Put the tomato sauce into smaller metal, shallow pans, stir often, put in an ice water bath, etc.
Food was being overfilled in a metal insert in the stand up freezer. The food was touching the exterior of a french fry bag.
