The dishwasher is repaired and able to reach the required sanitizing temperature, or, 2. You implement a modified three compartment sink method, with an approved sanitizing step at the end of the wash–rinse–sanitize process., - The Jr. Preschool room: 2 compartment sink and there is no Sanitize step performed to sanitize the dishes and cutlery. The operator informed that they do an air dry step after the 2 compartment wash and rinse. A sanitize step must be performed either through a mechanical dishwasher or a modified 3rd sink sanitize step.
