Raw basa fish was stored above ready-to-eat foods, including cake, in the countertop freezer. The staff member was instructed to relocate the raw fish. Ready-to-eat foods and raw vegetables must always be stored above raw meat and fish in refrigerated storage.
The staff member indicated that no sanitizing cycle is being conducted during manual dishwashing. Education was provided on proper two-compartment sink procedures: wash and rinse in the first compartment and sanitize in the second compartment using an appropriate sanitizer solution.
The hand sink in the main food prep area drains slowly. Please fix it to ensure proper handwashing and drainage.
