A package of raw meat was found stored above a jug of milk inside the prep cooler in the food preparation area. The package of raw meat was moved to the bottom shelf of the cooler during the inspection., Ensure that raw meats are always store below and/or away from ready to eat foods and beverage in order to avoid possible cross-contamination with raw meat juices.
No probe-style thermometer available for monitoring cooking, hot-holding, and cooling temperatures of foods. Obtain a probe-style thermometer that is capable of measuring temperatures in the range of approximately 0C to 100C.
There was no liquid soap or paper towel provided in holders/dispensers at the sink area in the front food preparation area. Liquid soap and paper towel must be available for hand washing at all times. , (Staff were using the hand sink around the corner in the meat cutting area. Ensure hand washing supplies are provided at the front sink area as well).
Ziplock bags containing spices were found to be contained inside a black garbage bag, inside the walk-in cooler., Do not use garbage bags for food storage, as they contain chemicals for odor suppression that may leach into food. Use only food-grade bags or packaging for food storage.
