The hot holding unit, partially covered with aluminum foil, measured 54C with a probe thermometer. After covering with a lid, the temperature rose to 60C within a few minutes. The operator was advised to turn on the unit earlier before food is brought from the kitchen, ensure the unit has a lid, and maintain enough water to sustain the temperature and contact with the dish pan. , , Corrected on site: Staff left the lid on the unit to maintain the temperature.

*Pureed item was measured to be 40C upon arrival to the servery for lunch. Reheat temperature was not sufficient. Discussed food items need to be reheated to at least 74C. Corrected on site: Staff reheated puree to 74C.
*Found resident’s personal food items stored in the servery refrigerator. Discussed there needs to be adequate separation of residents’ personal food items from facility items to prevent cross contamination (e.g. dedicated area/fridge).
