No sanitizer was detected in the final rinse cycle of the kitchen dishwasher. The bottle of sanitizer connected to the machine was empty. Staff instructed to replace the bottle, however despite after running the machine several times, no sanitizer was detected at dish level after the final rinse. , , REQUIRED ACTION: dishwasher is to be serviced so that 100 ppm chlorine is detected at dish level after the final rinse. All dishes and utensils are to be run through the dishwasher in the bar area, or manually washed, rinsed and sanitized in the kitchen as demonstrated using the two-compartment sink.
Some mouse droppings were noted in the following areas:, , -on the kitchen counter behind the dough mixer and meat slicer, -in the cupboards next to the ice machine in the kitchen, -on the lower shelving in the bar area, -at the back of some of the counters in the bar area, , REQUIRED ACTION: clean and sanitize the areas immediately as discussed during inspection. Contact your pest control company to notify then of the affected areas and have them implement additional control and monitoring devices as needed.
