Beans and chicken in the hot holding unit measured 48 to 50 degrees Celsius. Chicken and beans were reheated on the stove. The fridge ambient temperature middle shelf measured 4 degrees Celsius and the bottom shelf measured 10 degrees Celsius. Food was re-arranged to place cooked meat in the centre and vegetables on the bottom and items were removed to allow for better air circulation of the fridge.
