1. One hundred and eighty eggs were stored at room temperature. Internal temperature of one egg measured 19 degrees Celsius. Do not store numerous flats of eggs at room temperature. Internal temperature of hard-shelled raw eggs should not be more than 7 degrees Celsius., , 2. Ham stored in top section of prep line cooler measured 20 degrees Celsius. Product was stacked well above the "fill" line. Do not store product above the fill line as it will not maintain required temperature. Product discarded.

Duct tape used on dishwasher, kitchen door and handles for cooler in front coffee / drinks area., Do not use tape on food equipment as it is sticky and not cleanable.
