Was advised that no dishwashing was going to be done on-site; extra utensils brought so that all could be taken back to the restaurant to clean and sanitize at end of the night. There was bleach on-site but no chlorine testing strips, should provide in case do end up needing to clean and sanitize items on-site.
The wastewater collection container did not have a lid/not enclosed. Wastewater to be in an enclosed container. , , Recommend a sump pump to pump directly into large wastewater tanks that are on-site rather than having to dump out wastewater container as were hooked up to water supply so could exceed capacity of wastewater container/could overflow.
