Temperature logs were reviewed for the month of August regarding the foods received by Fueling Minds Catering. , , 1) There were missing logs between August 23-September 01 for hot holding practices, and no cold holding logs were being recorded., , 2) On August 15, it was recorded that hot foods arrived at 52C. Despite being under 60C, the food did not appear to be reheated by kitchen staff as the serving time temperature was identical., , Since moving to parent provided foods, this concern shall be considered corrected., , REQUIREMENT: Temperature logs need to be maintained for all foods received by the facility. Appropriate and timely actions (i.e. cooling and reheating) need to be done when foods are noted to be in the temperature danger zone (4C to 60C).
