Cooked chicken and beef burgers were at 42C to 48C (internal temperature) in the hot holding unit. Ensure that food is cooked to at least 74C before placing in the hot holding unit. Hold hot foods at 60C or above. The hot holding unit must be preheated to at least 60C before it is used.
A staff purse was stored next to food on the dry food storage shelf. Ensure that personal items are stored separate from food and food handling equipment.
Chlorine test strips were unavailable upon request. Ensure that test strips for each type of sanitizing solution used onsite are available.
Cleaning is needed under the 2 compartment sink and on the legs of the deep fryer. Please clean as discussed.
