PassThe kitchen was disorganized and in disarray, open food containers, dirty dishes, and equipment not related to the day-to-day operation of a kitchen was observed throughout the kitchen. Please organize and clean the kitchen.
Please ensure the mechanical dishwasher is able to dispense 100ppm of chlorine, PHI ran the dishwasher 3-4 times and no sanitizer was dispensing, as mentioned you must sanitize dishes in the 2-compartment sink or only serve single use items.
The handwashing sink observed in the kitchen, did not have sufficient water flow or pressure. Please have this fix.
Please obtain sanitizer test strips to check concentrations.
Pest control records were not available., - Pest control records must be maintained.
No mice droppings observed at the time of the inspection, however PHI was unable to obtain records of a pest control company. , , Please also seal up potential entry points for pest, including the kitchen back door gap, the lounge back door gap, the front door gap., , Previous Violation, , A few mouse droppings were seen behind the dough mixture. , - Retain the services of a professional pest control company to control and eliminate the mice infestation throughout the food establishment. The kitchen fume hood was observed to be on but not suffice in drawing the smoke out of the kitchen, please have this repaired.
The ice machine requires a deep clean, as mold is observed inside the machine. Coffee mugs stored on shelves by the entrance door observed to have heavy dust build up on shelves, please clean and sanitize. , , Please clean and sanitize bar fridges as heavy buildup of liquid debris observed on the bottom of the bar fridges.
