Initially product (Bison chili) brought hot from restaurant was measured between 36 and 47C. Hot holding was being used to reheat. Additional burner brought from restaurant to rapidly reheat product to a minimum of 74C (165F). Ensure product is maintained hot during transport, additional insulated boxes may be required.
