The measured concentration of the QUAT sanitizer concentration in the 3 compartment was only 100ppm. Informed operator who refilled compartment with fresh sanitizer solution. Remeasured and concentration was acceptable (200ppm).
The hot holding unit appeared off. Measured temperatures of the bacon and sausages in the container were <60C. Informed operator who voluntarily disposed of product and turned on the hot holding unit. Please ensure unit is on and temperature requirements are met.
