The quats dispenser is not dispensing sanitizer solution. The dispensed solution is around 0 ppm. The operator indicated that they would contact Ecolab immediately to resolve it. There is bleach and test strips on site and the operator was asked to use bleach sanitizer before Ecolab fixes the dispenser. Instruction on how to prepare 100 ppm chlorine solution was provided to the operator.
There are several spray bottles in the kitchen that are not labeled. Please ensure all spray bottles are labeled.
The rice in the hot holding steam table was measured at 47 °C. The rest of items kept in the steam table were maintained above 60°C. The operator indicated that they used two containers for the rice so it won't dry out the rice and the low temperature was most likely due to the extra layer of container., , The operator promptly threw away the rice. They will try to either use a rice warmer or cook the rice right before someone orders it.

The measured concentration for Quats sanitizer was at 50ppm. Operator refilled the bottle and was measured at 400 ppm.
1.The chicken and fish stored in the cooler were not covered. The operator immediately covered both items., 2. The scoop was stored in the flour container and was promptly removed by the operator.,
The paper towel dispenser in the washroom was empty which was promptly restocked by the operator.
The temperature of salad cooler is slightly above 4 °C and there is no thermometer inside. The operator closed the lid of the prep table. Please ensure all freezers and fridges have thermometers inside.
There was a scoop in the flour container with handle touching the flour. It appeared that the scoop holder inside the container was broken. The operator removed the scoop promptly.
