Food in hot holding units initially measured between 31.6-41.7 degree Celsius. This was corrected during the inspection. Corrected temperatures measured between 59-62 degree Celsius and were still increasing. , Foods kept in hot holding units must be stored at temperatures 60 degree Celsius or above.

Food was brought the booth at around 30C. Operator did not want food to be too hot. Please remember that all food must be hot held above 60C. Egusi soup was sitting in a pot on the floor with no temperature control. While hot holding was available for serving, the booth did lack hot holding for bulk food products and there was no thermometer on site to verify temperatures. Operator noted that the food will not sit there long. She was advised that she has to monitor how long it sits there with no temperature control. Please ensure additional temperature control is used for next event.
Bleach was not detected at the time of the inspection. Operator called to have bleach brought over. New bleach solutions need to be mixed up daily.
