The quats sanitizer, in the sanitizer bucket, was 50ppm. This was corrected at the time of inspection. Please ensure that the quats sanitizer concentrations are maintained between 200ppm-400ppm for effective disinfection of food contact surfaces.
One of the prep cooler temperatures was 10°C. The staff reported that the cooler had recently been cleaned and was frequently opened in the last hour. The top of the prep cooler was closed to allow the temperatures to decrease. The temperature decreased below 4°C at the time of inspection.
