The operator placed a second candle under each of the four hot-holding units. Upon re-inspection, all hot-holding units appeared to be at or above 60c/140F or greater. In future, (and if you wish to use candle-style hot-holding units), ensure there is a minimum of two (2) candles underneath all chaffing dishes to ensure this temperature is achieved and maintained.
