Quats sanitizer measured 500-600 ppm when staff prepared solution during inspection. Discussed decreasing levels to ~200 ppm. High amounts of sanitizer can leave a residue on surfaces.
The kitchen dishwasher chlorine measured <100 ppm. The plug kept coming out & staff will need to get a replacement part for it to ensure it stays in during the sanitizing cycle. , The bar dishwasher only had one line connected to detergent container. The other two lines did not have anything connected to them. , Discussed contacting dishwasher technician to come onsite for servicing., Staff will communicate to everyone that the dishwashers cannot properly sanitize. Staff were instructed to dishwash manually using three sink method.
Scoops were being stored in dry ingredients. Discussed storing scoops outside of food items. Recommend having a scoop holder.
There were flies noted in the kitchen. Please install fly sticky traps above non food areas.
The following areas need to be cleaned:, -Dish pit area had a buildup of grime on floors and walls. , -Underneath the ice machine had a buildup of grime on floor. , -Corner of floor next to the upright fridge had dirt and debris., -Flooring underneath hard to reach areas such as deep fryer, cookline and prep cooler areas had a buildup of grease, grime, food, or debris. , -The potato slicer had a buildup of food.

Sanitizer concentration for the dishwasher was found to be at 0 ppm chlorine., The detergent and the sanitizer containers were empty., Mike put in new containers for the detergent, sanitizer and rinse aid., , , Sanitizer concentration was tested again for the dishwasher and was found to be at 100 ppm chlorine., Test strips were not available and log sheet was not being filled out., Mike will order some chlorine test strips and the log sheet will be used to record results daily.
