Non conformeThe operator could not locate a food safe sanitizer. A bleach spray was mixed and measured 100 ppm chlorine.
Food inside of the warmer (wrapped hot dogs) measured ~50°C and had been inside for less than an hour. The warmer was turned up during the inspection, and the operator was to check the temperature in 15 minutes. Ensure hot foods are held at or above 60°C.
There were no test strips to verify sanitize concentration.
