ConformeThe hot holding unit was initially measured at 36°C. After allowing additional time for the unit to recover, it was remeasured and found to be maintaining temperatures as required at the time of inspection., , The temperature of the cooler/freezer where cheese was stored was initially measured at 11°C. Within 2 hours, the temperature decreased to 0.5°C, meeting the required temperature at the time of inspection.
The hand sink had no hot water due to a broken hose. The operator replaced the hose, and hot water was restored and available at the time of inspection.
