Debris and crumbs on the shelves below prep counter - a thorough clean up and daily ongoing maintenance. , Used and dirty cloths and sponges on counters all over kitchen- staff discarded sponges and put rags into the laundry bin- one cloth per task, hold in chlorine solution or paper towel

Outstanding issue: Staff unable to demonstrate proper steps to wash and sanitize food prep and client re-use items (jugs, knives etc) , Discussed, wrote out steps and provided a poster for 2 sink method which would best be accomplished in the two industrial size sinks in storage room.
