A large container of frozen chicken was observed thawing at room temperature. The manager was instructed to move the chicken to the walk-in cooler immediately. Proper thawing procedures were reviewed, including thawing under refrigeration at 4 °C or lower or under fully submerged cold running water.
There was no hand soap at the hand sink located at the bar. Hand sinks must be fully stocked at all times with liquid soap in a suitable dispenser to ensure proper hand hygiene.
