Two pans with high risk foods (appeared to be chicken leg inside of curry sauce, and another curry sauce) observed placed underneath the gas burner at room temperature, recorded 20C.

Garbage bags observed being used for food storage and food coverage within the walk-in cooler and walk-in freezer.
Operator was unable to describe three compartment sink manual dishwashing method. Sanitizer container (concentrated QUAT that required dilution) was disconnected from the dispensing system, operator was unable to describe dilution steps to prepare 200ppm QUAT sanitizer solution.
