• The commercial dishwasher is not operating properly. After two cycles, the final rinse temperature measured at the plate level was 66 °C. PHI was unable to complete a full assessment of the dishwasher due to detergent overflowing from the unit during operation, which was caused by the use of inappropriate detergent and rinse aid. Ensure that suitable commercial‑grade dishwasher detergent and rinse agent are obtained and used.
