The operator is to ensure professional cleaning of the exhaust hood canopy is scheduled at least once every six months (with the filters washed by staff at least once a week, or more as necessary - with use of manual dishwashing and/or pressure-hose washing at car wash, etc)., , Also, there was lack of adequate storage space in the walk-in cooler/freezer units with additional shelving required (so that all food products are stored at least six inches (15cm) off the floor and onto racks, shelves, or pallets).
