The hand sink was filled with soap & water with dishes. The adjacent other two sinks were also full. The set up is adequate for three sink dishwashing as the third is the hand sink. , The hand sink must be designated for hand washing only. There are two additional sinks for washing dishes that then go into the sanitizer. Label the hand sink as such.
The sanitizer did not reach over 69C at the plate after running it 3x, Must reach 71C at the plate for proper sanitizing. , Please correct and report back
