The QUAT sanitizer is measured at 50 ppm during inspection. Ecolab was on-site during the visit and adjusted the pump to increase the concentration of the QUAT sanitizer. The concentration was measured at 200 ppm during inspection.
The handwashing sink near the dishwashing area is observed to be non-operational. Ensure that the sink is repaired or replaced.
A small gap in the wall is noted in the corner of the dishwashing area. Ensure that the gap is sealed to be smooth, easily cleanable and resistant to moisture.
A buildup of food debris is observed beneath the shelving in the walk-in cooler. Ensure that areas which are difficult to access are routinely cleaned. The operator cleaned the indicated area during the inspection.
