The QUAT-based sanitizer solution used to sanitize food-contact surfaces was measured at 100-ppm. The QUAT sanitizer was being dispensed from the pre-diluted QUAT dispenser. The inspector informed the operator that a 200-ppm chlorine sanitizer solution must be maintained at all times during the operations. Please contact a technician to service the dispenser., **FIX THE SANITIZER DISPENSER., **NOTE (2023-12-09). The sanitizer dispenser was serviced by a technician. Proof of service from EcoLab was provided. The report indicated that the black chemical knob was not properly closed and sanitizer going through the pick-up tube. The technician coached the manager how to properly place the chemical bag inside the basket and closed the knob properly. The technician indicated that the dispensed solution was then measured to have a 300-ppm QUAT concentration. This will be confirmed on the next inspection. Please ensure to maintain all sanitizer solutions at all times moving forward.
