Pearls (large pearls on a rack in the back area, left container 39.2C, right container 39.8C, sago 19.0C by the prep cooler) were again observed at room temperature with no apparent measure for timing or temperature control., ----------, 2) Sago in an insert on the counter at room temperature, measured between 19-21C., 3) Cooked pearls sitting in back room rack. Staff said this product would be left all day and just recooked when used., -Maintain perishable foods <4C or >60C
