Raw, chicken wings were being rinsed in the sink by the dishwasher., -ensure the sink is disinfected prior to use; OR use a large bin inside the sink to prevent any contamination.

Large volumes (greater than 6L) of sauces were cooling on the counter., -cool large volumes of sauce, soups, gravy, etc in an ice bath OR use smaller containers (4, or 6L)

Shelled eggs were stored about ready-to-eat foods in the walk-in cooler., -store eggs below ready-to-eat foods, cooked foods, produce, etc

The gasket on the line cooler was in disrepair and repaired with duct tape., -replace any damaged parts/equipment., -duct tape is not a fix-all.

The floor under shelves in the walk-in cooler was dirty with debris/sauce, etc., -clean the floor, walls, shelves, etc in the walk-in cooler. , -recommend adding all equipment on wheels so they can be moved to facilitate easy cleaning.
