Gravy, soups and hollandaise sauce was stored between 32C and 47C (internal temperature) in the hot holding unit. Staff directed to reheat the sauces to 74C and then store at 60C or above.
There was no paper towel holder at the hand wash sink in the front serving area. Install a paper towel dispenser. Ensure that paper towel is stored in such a way that it is protected from contamination.
