Staff advised that the owner prepares the food and places the portions out for staff to distribute to rooms., A probe thermometer measurement of the chicken soup registered 24°C, indicating that the soup was not being maintained at a safe hot-holding temperature., The owner returned shortly thereafter and was instructed to return the soup portions to a pot, reheat the soup to 74°C, and then maintain it at a hot-holding temperature of 60°C or higher prior to service.
