The ice well (by the Pepsi machine in dining room) had a leak underneath. Repairs were made, however, there was still an active leak. Please rectify.
The walk in cooler was at 9C. Four products (coleslaw and sauces) from the unit measured at 9C. All high risk foods were transferred to other cold holding units. Ensure the unit is at 4C or less, repair or replace unit. , , A baker’s rack had cooked meat cooling at room temperature. Operator indicated that it had been cooling for about an hour. Ensure no high risk foods are stored at room temperature for more than 2 hours. , , A probe thermometer was present. , , Please verify all coolers are equipped with thermometers.
Staff washroom had no cold water. Hot water, soap and paper towels were present., , Hand sink (by the cookline equipment), was obstructed by a sanitizer pail in the basin.
Personal items (ie. Backpacks, sunglasses, cellphone, thermos, etc) were observed throughout the kitchen including the server area. Place all personal items in the staff room or a designated staff area. , A stainless-steel bin containing raw beef patties was observed to be stored above ready to eat/low risk foods in the prep cooler., Some food inside coolers were uncovered such as meat and green beans.
QUAT test strips were expired in 2017. Iodine test strips had expired in 2021. , Chlorine test strips were present.
Hired pest control company comes monthly., , Mouse droppings observed in the dry storage room. Plastic bag covering appliance had been chewed as well., , The exterior double doors in the back kitchen showed a gap below the doors. , , The front entrance double doors had a gap at the bottom.
The ice well in the lounge/bar area was leaking underneath., , A leak was present underneath the hand sink (by the cookline equipment). , , The ice well (by the Pepsi machine) had a leak underneath. , , Ceiling tile/grate missing by the staff washroom., , The lighting in the dishwashing area was poor. Increase the lighting so that it is bright enough to see the cleanliness of hard-to-reach areas of the floor.
The ice scoop for the ice machine had buildup of hardness and was due for cleaning. The inside of the ice machine was also due for cleaning as well., , Handles of the prep coolers in the server area had buildup of dried food. Please thoroughly clean all handles of prep coolers., , A broken and stained plastic pitcher was noted in the dishwashing area shelf. One pitcher was sent for disposal. , , Some plastic items such as plastic trays and lids on the storage rack were chipped/ cracked, damaged. Remove/discard all damaged items. , , Operator indicated the mechanical ventilation canopy was professionally cleaned quarterly. The filters would be cleaned weekly., , The inside of cold holding units had buildup of food, sauce and/or grease. Please clean., , There was an odor coming from the walk in cooler. Investigate and conduct a full cleaning of the unit as there was buildup of sauces, grime, dried blood juices noted. There were trays (covered with black garbage bags) on the floor as well. Walls had some buildup of dust and debris as well., , The front area of the walk in cooler door had buildup of dried sauce, please clean door., , Walk in cooler had a leak coming from the alcohol lines. Floor had a liquid pooling near the front., , Bits of food/grease were present underneath the cookline equipment. Clean floor and flat-top grill trays.
The storage room in the “take out area” had an accumulation of empty beverage bottles, chairs, etc. The beverage bottles were removed during the inspection. To prevent harborage of pests, please clean this area and remove items that are no longer needed. This goes the same for the dry storage room. , , There were cobwebs on plumbing lines by the grease trap of dishwashing area. , , There was dust buildup on ceiling tiles in certain areas of the kitchen.
The dishwasher measured below 100ppm on its first cycle. A second cycle was completed and chlorine measured at proper concentration. Please ensure dishwasher is meeting proper concentration each cycle.

A large number of beetles which appear to be Larder Beetles are observed on traps throughout the facility. , Ensure pest control measures are taken such as utilizing enhanced cleaning and sanitization in areas beneath equipment to help eliminate the presence of pests in the facility.

Iodine is measured at 0 ppm at the glasswasher in the front bar area. Upon opening the cabinet beneath the dishwasher, there is no Iodine sanitizer observed to be left in the bottle. , Ensure that Iodine sanitizer is acquired and that the indicated glasswasher is measured between 12.5-25 ppm with iodine test strips before use.
Two scoops without handles are observed in the dry food products. , Ensure that scoops with handles are acquired to help prevent contamination of the food.
Several gaps are observed at the receiving door which pay permit the entry of pests into the facility. , Ensure that the indicated gaps are sealed.
Two ceiling lights are observed to be burnt out in the back kitchen area. , Ensure that the lights are replaced.
Both the long cutting boards for the prep coolers at the server area was cleaner as the staff indicated they have tried their best to improve the boards. However, the boards were still showing deep signs of staining and were still discolored. , , Going forward, please either replace or re-plane the boards to ensure the boards are white. Follow-up will be completed on this issue.
