PassA hot item (shredded chicken) was being stored on top of the inserts in the prep cooler. Staff pass hot items to the staff on the other side this way. The items beneath can become warmed up, especially the longer the hot item sits there., , Ensure hot foods are kept hot (60C or higher) and cold foods are kept cold (4C or less).
There was no paper towel at the back of house hand sink., , Ensure hand sinks are stocked with soap and paper towel.
- Flies noted sitting along the walls inside the office and just outside the office., - Pest control reports do not indicate a fly issue., , Ensure proper follow-up is done with the flies, ensuring thorough cleaning where they are congregating, killing adult flies as long as food/food prep areas are protected, removing any food/ moisture. Discuss with pest control other control measures.
The prep sink by the entrance to the food area does not have a steady stream of hot or cold running water due to the valve being shut off. Manager indicated there have been issues with the pipes and that this would be checked at during the upcoming renovation at the end of April., , Ensure plumbing gets fixed and hot/cold running water is available at sinks.
